All pure honey crystallizes when it is in its natural state.
If you notice your honey has thickened or become grainy- that’s natural! It is crystallizing- there is nothing wrong with your honey nor does this natural process affect its taste or nutritional and health benefits. Many customers seek out crystallized honey as a premium product as it is prepared in small batches to facilitate the crystallization process. Folks LOVE to spread it on toast, or eat it by the spoonful when it’s crystallized! All natural honey does this (except Tupelo blossom honey), especially when you purchase pure, natural honey that has not been heated like honey purchased in stores. However, if you do not wish your honey to be crystallized but rather more liquid you can easily reset it...
Prevent crystallization by keeping your honey on a windowsill in warm months, or near the stove in cold months. Or just don’t worry about it! Crystallization happens to natural, pure honey- if you want your honey to be more liquid- or runny, simply warm the amount you want to by placing the honey in a bowl of hot water using its original jar, or another container with less than the full jar of honey (useful if you purchased 2 pound jars). Let it sit and re-warm the water as needed until the honey is runny. In summer months, setting the honey in the direct sun will provide the same result. You can do this repeatedly to any honey. Do NOT heat honey in the microwave, as extreme heat breaks down the natural enzymes in honey which are so healthy to the human body.
FDA guidelines require standardized, “Big-Business” store-bought honey to be heated and homogenized in order to prevent crystallization of honey on shelves or in warehouses since it takes months to process, ship and sell. This is not the case for farm-to-table products or family-farm-harvested honey. You do not have to request a return of exchange for crystallized honey. We only ship honey in its liquid form unless you happened to purchase our rare batches of thicker honey or if you bought Cream Honey. If your honey crystallizes in shipping (this can occur in Winter months), follow the directions above and it will re-constitute to its original state naturally. If your honey crystallizes on the shelf this same process will return it to a more liquid state.
